7 or Less (Final week 6)...

It is our last and final week of recipes using 7 ingredients or less.  To continue my efforts to eat more seafood (or any at all) I am going to finish this theme with a fish taco recipe.  I am not sure yet what our next monday theme will be??  Maybe recipes using Nutella (my latest obsession!) or maybe a new "well-being" category all together.  If you have a suggestion, let me know.  Now enjoy your fish taco recipe....I cut and pasted this recipe directly from www.delish.com.  


beer battered fish tacos and avocado salsa

Yields: 2 servings
Total Time: 30 min
Prep Time: 30 min
  • 3 tablespoon(s) all-purpose flour
  • 1/8 teaspoon(s) ground cumin
  • 1/8 teaspoon(s) salt
  • 1/8 teaspoon(s) cayenne pepper, or to taste
  • 1/3 cup(s) beer
  • 8 ounce(s) tilapia fillet, cut crosswise into 1-inch wide strips
  • 2 teaspoon(s) canola oil
  • 4  corn tortillas, warmed

Directions
  1. Prepare Tomato and Avocado Salsa, if using.
  2. Combine flour, cumin, salt, and cayenne in a medium bowl. Whisk in beer to create a batter.
  3. Coat tilapia pieces in the batter. Heat oil in a large nonstick skillet over medium-high heat. Letting excess batter drip back into the bowl, add the fish to the pan; cook until crispy and golden, 2 to 4 minutes per side. Serve the fish with tortillas and salsa.
