7 or Less (week 4)...

Another one of my summer favorites!  We grill so much during the summer so its nice to switch from beef sometimes.  These burgers are light and have endless topping options!  Add in or take away veggies based on your child's eating habits.  The finer you chop those veggies the less likely they are to taste them (and complain about how disgusting they are)!  I made these yesterday and added in an extra-special ingredient, Palmetto Pimento cheese!  

Grilled Chicken Burgers

1. finely ground chicken breasts (I use breasts and just put them in the food processor)
2. finely chopped red pepper
3. finely chopped green pepper
4. diced onion
5. Palmetto Pimento Cheese
6. splash of soy sauce
7. splash of dry sherry (I use Taylor's brand)
season with garlic powder, salt & pepper

Recipe:
Grind the chicken for a couple of spins in the food processor.  Add in the chopped green and red peppers, onion, soy sauce, dry sherry, garlic powder, and salt & pepper.  Pulse only 1-2 more times so that the veggies do not become too diced and watery.


Scoop a large tablespoon of the pimento cheese into a bowl with the rest of the chicken mixture.  Blend and form into patties. 


Place the patties between wax paper on a sturdy surface.  Place into the freezer for 10 minutes just to firm the patties and make them easier to handle.


Spray the grill with non-stick spray and grill for about 15 minutes before flipping, cooking a total of about 25 minutes.



*We had ours on toasted french bread topped with diced tomato, sour cream, and crispy bacon...yum, yum and yum!  For the boys I chopped up a patty and mixed it in a bowl with some yellow corn and they loved it!

*Other suggested toppings: cucumber, sliced jalapenos, sautéed mushrooms, salsa, sliced avocado, lettuce...

*Can also be served without the bun over mixed greens topped with crispy tortilla strips.
